Description

A comforting one-pot Cajun shrimp jambalaya packed with bold flavors and easy to prepare, perfect for any occasion.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, bell pepper, and celery, and sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add Cajun seasoning and cooked rice, blending well.
  5. Pour in chicken broth and diced tomatoes; bring to a boil.
  6. Reduce heat to a simmer and cook for about 15 to 20 minutes, until rice is cooked.
  7. Add shrimp and cook until they turn pink and firm, about 5 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with sliced green onions.
