Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup rice
- 1 can diced tomatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Green onions, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, bell pepper, and celery, and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add Cajun seasoning and cooked rice, blending well.
- Pour in chicken broth and diced tomatoes; bring to a boil.
- Reduce heat to a simmer and cook for about 15 to 20 minutes, until rice is cooked.
- Add shrimp and cook until they turn pink and firm, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
