Ingredients

  • 1 cup apple cider
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 cup butter, softened
  • 1/4 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Cinnamon sugar for rolling (optional)
  • Caramel sauce for drizzling (optional)


Instructions

  1. Reduce apple cider in a saucepan until syrupy; cool.
  2. Mix cream cheese and sugar in a bowl until smooth.
  3. Scoop cheesecake mixture into small balls and freeze until firm.
  4. Combine flour, baking soda, cinnamon, and salt in a mixing bowl.
  5. Beat butter, brown sugar, and vanilla in a separate bowl until creamy.
  6. Add dry ingredients into the butter mixture and mix until combined.
  7. Wrap a portion of dough around the frozen cheesecake ball; pinch seams to seal.
  8. Chill the cookies for 30 minutes if dough is sticky.
  9. Bake at 350°F (175°C) for 12-15 minutes or until edges are set.
  10. Cool on a wire rack before serving.
