Ingredients
- 1 cup apple cider
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 cup butter, softened
- 1/4 cup brown sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- Cinnamon sugar for rolling (optional)
- Caramel sauce for drizzling (optional)
Instructions
- Reduce apple cider in a saucepan until syrupy; cool.
- Mix cream cheese and sugar in a bowl until smooth.
- Scoop cheesecake mixture into small balls and freeze until firm.
- Combine flour, baking soda, cinnamon, and salt in a mixing bowl.
- Beat butter, brown sugar, and vanilla in a separate bowl until creamy.
- Add dry ingredients into the butter mixture and mix until combined.
- Wrap a portion of dough around the frozen cheesecake ball; pinch seams to seal.
- Chill the cookies for 30 minutes if dough is sticky.
- Bake at 350°F (175°C) for 12-15 minutes or until edges are set.
- Cool on a wire rack before serving.
