A creamy and comforting casserole combining broccoli, rice, and cheddar cheese, perfect for weeknight dinners or potlucks.
Ingredients
- 2 cups broccoli florets
- 1 cup cooked rice
- 1 cup cheddar cheese, shredded
- 1/2 cup cream of mushroom soup
- 1/2 cup milk
- 1/4 cup onion, chopped
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 2-quart casserole dish with butter or nonstick spray.
- In a large bowl, combine the broccoli florets and cooked rice.
- Add the shredded cheddar cheese to the bowl.
- Stir in the cream of mushroom soup and the milk until evenly mixed.
- Add the chopped onion and the tablespoon of butter to the mixture.
- Season with salt and pepper and mix well to combine all ingredients.
- Pour the mixture into the greased casserole dish and spread it evenly.
- Bake in the preheated oven for 25 to 30 minutes until bubbly and lightly golden on top.
- Remove from the oven and let the casserole cool for 5 minutes before serving.
Notes
For a crunchier top, sprinkle panko breadcrumbs mixed with melted butter over the casserole for the last 10 minutes of baking.
