Description
A classic Southern-style gumbo with chicken, sausage, and a rich roux that delivers deep flavors. Perfect served over rice.
Ingredients
- 1 lb chicken, cut into pieces
- 1 lb sausage (Andouille or smoked), sliced
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 2 cups okra, sliced
- 2 bay leaves
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Cooked rice for serving
- Chopped green onions for garnish
- Fresh parsley for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Stir in the flour and cook, stirring constantly, until the mixture becomes a dark brown roux, about 20-30 minutes.
- Add the diced onion, bell pepper, celery, and garlic and cook until softened, about 5 minutes.
- Stir in the chicken and sausage and cook until browned.
- Pour in the chicken broth and add the okra, bay leaves, Cajun seasoning, salt, and pepper then bring to a boil.
- Reduce the heat to a simmer and simmer for at least 45 minutes, stirring occasionally, and remove the bay leaves before serving.
- Serve the gumbo over cooked rice and garnish with chopped green onions and fresh parsley.
Notes
This gumbo is perfect for serving with crusty French bread or cornbread. Customize garnishes with sliced green onions and lemon wedges for brightness.
