Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups egg noodles
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and sauté until the vegetables soften, about 5 to 7 minutes.
- Stir in the garlic and cook for an additional minute.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the cooked chicken, dried thyme, dried rosemary, salt, and pepper.
- Reduce the heat and let the soup simmer for 10 minutes.
- Add the egg noodles and cook until they are tender, about 8 to 10 minutes.
- Serve the soup hot, garnished with fresh parsley.
Notes
For best texture, store noodles separately if you plan to refrigerate leftovers.
