Description
A moist and spiced pumpkin bread that’s easy to make and perfect for fall. It’s great for breakfast or as a cozy treat.
Ingredients
- 1 can pumpkin puree (about 15 ounces)
- 2 eggs
- 1 cup sugar
- 1/2 cup oil or melted butter
- 1/4 cup milk or yogurt
- 1 and 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves or allspice (optional)
- 1 teaspoon vanilla
Instructions
- Preheat your oven to 350°F. Grease a loaf pan and line it with parchment.
- Whisk together the pumpkin puree, eggs, sugar, oil, milk, and vanilla until smooth.
- Sprinkle the flour, baking soda, baking powder, salt, and spices on top, then stir just until no dry flour remains.
- Pour the batter into the prepared pan and bake until golden, about 50 to 60 minutes. Check at 50 minutes.
- Let it cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
Notes
Avoid overmixing to keep the bread from being dense. Allow it to cool to enhance flavors.
