Description

A moist and spiced pumpkin bread that’s easy to make and perfect for fall. It’s great for breakfast or as a cozy treat.


Ingredients

  • 1 can pumpkin puree (about 15 ounces)
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup oil or melted butter
  • 1/4 cup milk or yogurt
  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves or allspice (optional)
  • 1 teaspoon vanilla


Instructions

  1. Preheat your oven to 350°F. Grease a loaf pan and line it with parchment.
  2. Whisk together the pumpkin puree, eggs, sugar, oil, milk, and vanilla until smooth.
  3. Sprinkle the flour, baking soda, baking powder, salt, and spices on top, then stir just until no dry flour remains.
  4. Pour the batter into the prepared pan and bake until golden, about 50 to 60 minutes. Check at 50 minutes.
  5. Let it cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Notes

Avoid overmixing to keep the bread from being dense. Allow it to cool to enhance flavors.
