Description
A creamy and cozy broccoli cheddar soup that is perfect for cold days, simple to make, and rich with cheddar flavor.
Ingredients
- 4 cups broccoli, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 tablespoons butter
- 3 tablespoons flour
- 3 cups milk
- 2 cups chicken or veggie broth
- 2 cups shredded sharp cheddar
- 1 cup shredded carrots (optional)
- Salt and pepper to taste
- Pinch of paprika or mustard powder (optional)
Instructions
- Melt the butter in a big pot over medium heat.
- Add the onion and cook for about 4 minutes until softened.
- Add the garlic and stir for 30 seconds.
- Sprinkle in the flour and stir for about 1 minute.
- Pour in the milk slowly while stirring to keep it smooth.
- Add the broth and stir until it thickens slightly, about 3 to 5 minutes.
- Stir in the chopped broccoli and carrots.
- Simmer gently until broccoli is tender, around 10 to 12 minutes.
- Turn the heat to low and add the cheddar gradually, stirring until melted.
- Taste and season with salt, pepper, and optional spices.
Notes
Use freshly shredded cheese for smoother melting. If you prefer a smoother soup, blend a portion of it but keep it chunky for texture.
