Description

A cozy and creamy potato soup that’s simple to make with basic ingredients, perfect for cold nights.


Ingredients

  • 4 to 5 medium potatoes, peeled or unpeeled, diced small
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 to 4 cups chicken broth or veggie broth
  • 1 cup milk or half and half
  • 2 to 3 tablespoons butter
  • 2 tablespoons flour (optional, for thicker soup)
  • Salt and black pepper
  • Optional toppings: shredded cheddar, bacon, green onion, sour cream


Instructions

  1. Melt butter over medium heat in a large pot. Add onion and cook until soft, about 5 minutes. Add garlic and stir for 30 seconds.
  2. If you want thicker soup, sprinkle flour and stir for 1 minute.
  3. Add diced potatoes and broth. Bring to a gentle boil, then lower to a simmer. Cover and cook until potatoes are very soft, around 15 to 20 minutes.
  4. Mash the potatoes right in the pot with a potato masher until mostly smooth with some small chunks.
  5. Lower the heat. Stir in milk or half and half and let it warm through for a few minutes. Taste and add salt and pepper to preference.
  6. If desired, stir in sour cream or cheddar at the end for extra creaminess or cheesiness.

Notes

For richer flavor, cook potatoes in broth instead of water. Add toppings for a customized meal.
