Ingredients
- 4 large russet potatoes
- 1 lb ground beef
- 2 tbsp taco seasoning
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1 cup salsa
- 1/2 cup diced tomatoes
- 1 cup shredded lettuce
- 1/4 cup chopped cilantro
- 1 jalapeno, sliced
- 1 avocado, sliced
- 1 lime, cut into wedges
- 1 cup crushed tortilla chips
Instructions
- Preheat the oven to 425°F (220°C).
- Scrub the potatoes clean and cut them into cubes.
- Toss the potato cubes in olive oil, salt, and pepper.
- Spread them on a baking sheet and roast for 30-40 minutes, flipping halfway through, until crispy.
- In a skillet, brown the ground beef over medium heat.
- Add the taco seasoning and a splash of water, mixing well.
- Let the beef simmer for about 5 minutes until well combined.
