Description

Ingredients

  • 4 large russet potatoes
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 cup salsa
  • 1/2 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/4 cup chopped cilantro
  • 1 jalapeno, sliced
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • 1 cup crushed tortilla chips


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Scrub the potatoes clean and cut them into cubes.
  3. Toss the potato cubes in olive oil, salt, and pepper.
  4. Spread them on a baking sheet and roast for 30-40 minutes, flipping halfway through, until crispy.
  5. In a skillet, brown the ground beef over medium heat.
