Ingredients
- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons flour (optional, for thickening)
Instructions
- Heat a large pot over medium heat until the oil shimmers.
- Add the olive oil, then add beef cubes in a single layer without crowding.
- Brown the beef cubes on all sides, working in batches as needed.
- Remove browned beef to a plate and set aside.
- Add the chopped onion to the pot and cook until translucent, about 4 minutes.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the flour, if using, and cook for 1 minute to remove the raw taste.
- Return the beef to the pot and add the beef broth, scraping up any browned bits.
- Stir in the carrots, potatoes, tomato paste, Worcestershire sauce, and thyme.
- Add salt and black pepper, then bring the mixture to a boil over high heat.
- Reduce heat to low, cover the pot, and simmer for 1.5 to 2 hours until the beef is tender.
- Taste and adjust seasoning as needed, then serve the stew hot.
Notes
For a richer sauce, consider stirring in butter at the end. Serve with crusty bread or over mashed potatoes for added comfort.
