Description
A comforting Irish beef stew made with tender beef chuck and hearty vegetables, perfect for chilly evenings.
Ingredients
- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Stir in the onion and garlic, cooking until softened.
- Add the tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Reduce heat and simmer for about 1 hour.
- Add the carrots and potatoes, continuing to simmer until the vegetables are tender, about 30 minutes more.
- Remove the bay leaf before serving.
Notes
Serve with crusty bread or over mashed potatoes. This stew improves in flavor when reheated.
