Description

A comforting Irish beef stew made with tender beef chuck and hearty vegetables, perfect for chilly evenings.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the onion and garlic, cooking until softened.
  4. Add the tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce heat and simmer for about 1 hour.
  7. Add the carrots and potatoes, continuing to simmer until the vegetables are tender, about 30 minutes more.
  8. Remove the bay leaf before serving.

Notes

Serve with crusty bread or over mashed potatoes. This stew improves in flavor when reheated.
