Description

A rich, soft pumpkin bread with deep chocolate flavor that stays moist for days and is perfect for any occasion.


Ingredients

  • 2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice or cinnamon plus nutmeg
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Heat your oven to 350°F and grease a loaf pan, lining it with parchment if desired.
  2. Mix the dry ingredients: flour, cocoa, baking soda, baking powder, salt, and spices in a bowl.
  3. Whisk the wet ingredients: pumpkin, eggs, oil, sugars, and vanilla in another bowl until smooth.
  4. Pour the dry into the wet and stir until just combined; avoid overmixing.
  5. Fold in most of the chocolate chips, then pour the batter into the pan; sprinkle remaining chips on top.
  6. Bake for about 50 to 60 minutes, checking at 50 with a toothpick.
  7. Cool in the pan for 10 to 15 minutes before moving to a rack.

Notes

For best results, use room temperature eggs and avoid packing flour. Allow the loaf to cool before slicing.
