Description

Indulgent molten lava cakes with a flowing chocolate center, perfect for a cozy dessert for two.


Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup semisweet chocolate chips
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup powdered sugar
  • 1 tablespoon all-purpose flour
  • Pinch of salt


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grease two ramekins thoroughly with butter or cooking spray.
  3. Place the butter and chocolate chips in a small saucepan over low heat and stir constantly until melted and smooth.
  4. Remove the chocolate mixture from heat and let it cool slightly.
  5. In a medium bowl, crack the whole egg and add the egg yolk, then pour in the powdered sugar and whisk until thick and pale.
  6. Stir the cooled chocolate mixture into the egg mixture until fully combined.
  7. Add the flour and a pinch of salt, folding gently until just incorporated.
  8. Divide the batter evenly between the prepared ramekins.
  9. Place the ramekins on a baking sheet and bake for 12 minutes, watching for set edges and a soft center.
  10. Remove the ramekins from the oven, let cool for 1 minute, run a thin knife around the rim to loosen, then invert onto plates and serve immediately.
