Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 4 packages (8 ounces each) cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and 1/4 cup of sugar.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Gradually add the remaining sugar, mixing well.
  6. Add the eggs one at a time, beating well after each addition; mix in vanilla, sour cream, and lemon juice until smooth.
  7. Pour the cream cheese mixture into the crust.
  8. Bake for 1 hour or until set; turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour, then refrigerate for at least 4 hours or overnight before serving.
