Description
A cozy and hearty chili that is simple to make and packed with classic beefy flavor, perfect for any cold day.
Ingredients
- 2 lbs ground beef (80/20)
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 28 oz crushed tomatoes or tomato sauce
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp black pepper
- Salt to taste
- 1-2 cups beef broth or water
- 1 can beans (kidney, pinto, or black), drained (optional)
Instructions
- Brown the beef in a big pot over medium heat until it’s no longer pink.
- Add chopped onion and cook until soft, then stir in minced garlic for about 30 seconds.
- Wake up the spices by stirring in chili powder, cumin, smoked paprika, black pepper, and a pinch of salt.
- Add tomato paste and let it cook for 1-2 minutes, combining well.
- Pour in crushed tomatoes and beef broth or water, scraping the bottom of the pot to loosen any stuck bits.
- Simmer uncovered for 30-45 minutes, stirring occasionally.
- Stir in drained beans during the last 15 minutes of cooking, if using.
- Taste and adjust seasoning if necessary before serving.
Notes
Chili tastes even better the next day. Store in the fridge for up to 4 days or freeze for up to 3 months.
