Description

A comforting slow cooker recipe featuring tender beef bites and creamy potatoes in a rich garlic butter sauce.

Ingredients

  • 2 to 2.5 pounds beef stew meat or chuck roast, cut into chunks
  • 1.5 to 2 pounds baby potatoes, halved if large
  • 5 to 6 cloves garlic, minced
  • 4 to 6 tablespoons butter, cut into pieces
  • 3/4 cup beef broth
  • Salt and pepper to taste
  • Optional: onion powder, dried thyme, chopped parsley for serving

Instructions

  1. Season the beef with salt, pepper, and onion powder.
  2. Add potatoes to the bottom of the slow cooker.
  3. Place the beef on top and scatter the garlic over everything.
  4. Pour in the beef broth.
  5. Add the butter pieces on top.
  6. Cook on LOW for 360 to 420 minutes, or HIGH for 180 to 240 minutes.
  7. Finish by stirring gently and tasting the sauce, adjusting seasoning as needed.
  8. Optional: Add chopped parsley before serving.

Notes

For a thicker sauce, mash a few potatoes and stir them back in. Store leftovers in an airtight container for up to 4 days.
