Description
A comforting slow cooker recipe featuring tender beef bites and creamy potatoes in a rich garlic butter sauce.
Ingredients
- 2 to 2.5 pounds beef stew meat or chuck roast, cut into chunks
- 1.5 to 2 pounds baby potatoes, halved if large
- 5 to 6 cloves garlic, minced
- 4 to 6 tablespoons butter, cut into pieces
- 3/4 cup beef broth
- Salt and pepper to taste
- Optional: onion powder, dried thyme, chopped parsley for serving
Instructions
- Season the beef with salt, pepper, and onion powder.
- Add potatoes to the bottom of the slow cooker.
- Place the beef on top and scatter the garlic over everything.
- Pour in the beef broth.
- Add the butter pieces on top.
- Cook on LOW for 360 to 420 minutes, or HIGH for 180 to 240 minutes.
- Finish by stirring gently and tasting the sauce, adjusting seasoning as needed.
- Optional: Add chopped parsley before serving.
Notes
For a thicker sauce, mash a few potatoes and stir them back in. Store leftovers in an airtight container for up to 4 days.
