Description

A cozy and filling slow cooker meal featuring tender chicken, soft potatoes, and a rich garlic parmesan sauce.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 lb baby potatoes or chopped Yukon golds
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 4 tbsp butter, melted
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Optional: Paprika or red pepper flakes
  • Optional: Chopped parsley for garnish


Instructions

  1. Lightly grease your slow cooker insert.
  2. Add the potatoes first and season with salt, pepper, and Italian seasoning.
  3. Place the chicken on top and season it as well.
  4. Mix the melted butter, minced garlic, chicken broth, and Parmesan in a small bowl, then pour over everything.
  5. Cover and cook on low until the chicken is cooked through and potatoes are fork tender.
  6. Finish with extra Parmesan on top and a sprinkle of parsley before serving.

Notes

For a richer flavor, adjust the amount of garlic and Parmesan to your liking. Ensure chicken is thawed before cooking.
