Description
A hearty and cozy butter bean soup that’s perfect for a comforting meal, whether you’re using dried, canned, or frozen beans.
Ingredients
- Butter beans (frozen, canned, or cooked from dried)
- 1 Onion, diced
- 1 Celery, chopped (optional)
- 2 Garlic cloves, minced
- 4 cups Broth (chicken or veggie)
- Smoked meat (ham, smoked turkey, or bacon, optional)
- 1 Bay leaf
- Salt, to taste
- Black pepper, to taste
- A pinch of paprika or Cajun seasoning (optional)
- A splash of cream or a pat of butter (optional)
Instructions
- Prepare your ingredients by dicing onion and chopping celery and garlic.
- Add broth, onion, celery, garlic, and bay leaf to the slow cooker (or Instant Pot).
- Include smoked meat if using, then stir in the butter beans.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours (for frozen beans).
- If using canned beans, cook everything for 2 hours on LOW, then add the drained and rinsed beans and cook for 1 more hour.
- Taste the soup near the end and adjust seasoning as necessary.
- Optionally, for a creamier soup, mash a scoop of beans and stir back into the pot.
Notes
Serve with cornbread or crusty bread for a complete meal.
