Description

A hearty and cozy butter bean soup that’s perfect for a comforting meal, whether you’re using dried, canned, or frozen beans.


Ingredients

  • Butter beans (frozen, canned, or cooked from dried)
  • 1 Onion, diced
  • 1 Celery, chopped (optional)
  • 2 Garlic cloves, minced
  • 4 cups Broth (chicken or veggie)
  • Smoked meat (ham, smoked turkey, or bacon, optional)
  • 1 Bay leaf
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of paprika or Cajun seasoning (optional)
  • A splash of cream or a pat of butter (optional)


Instructions

  1. Prepare your ingredients by dicing onion and chopping celery and garlic.
  2. Add broth, onion, celery, garlic, and bay leaf to the slow cooker (or Instant Pot).
  3. Include smoked meat if using, then stir in the butter beans.
  4. Cook on LOW for 6-7 hours or HIGH for 3-4 hours (for frozen beans).
  5. If using canned beans, cook everything for 2 hours on LOW, then add the drained and rinsed beans and cook for 1 more hour.
  6. Taste the soup near the end and adjust seasoning as necessary.
  7. Optionally, for a creamier soup, mash a scoop of beans and stir back into the pot.

Notes

Serve with cornbread or crusty bread for a complete meal.
