Description

A warm and inviting vegetarian chili that gathers everyone around the dinner table with its comforting flavors and easy preparation.


Ingredients

  • 1 can black beans
  • 1 can kidney beans
  • 1 can diced tomatoes
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Oil for sautéing


Instructions

  1. Heat some oil in a large pot over medium heat.
  2. Sauté the chopped onion and bell pepper until soft.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the chili powder and cumin.
  5. Add the black beans, kidney beans, diced tomatoes, and vegetable broth to the pot.
  6. Bring the mixture to a boil.
  7. Reduce heat and simmer for 30 minutes.
  8. Season with salt and pepper before serving.

Notes

For a thicker chili, mash a portion of the beans against the pot wall. Serve over rice, baked potatoes, or mixed greens.
