Ingredients
- 8 oz pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup asparagus, chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté for about 1 minute until fragrant.
- Add bell peppers, zucchini, and asparagus, and cook for about 5-7 minutes until tender.
- Stir in cherry tomatoes and cook for another 2 minutes.
- Add the cooked pasta to the skillet and toss to combine.
- Sprinkle with Parmesan cheese, salt, and pepper.
- Garnish with fresh basil before serving.
Notes
Serve this primavera straight from the skillet or plate individual portions with extra Parmesan. Add lemon wedges for brightness.
