Colorful bell peppers filled with a savory mixture of ground beef, rice, and tomatoes, perfect for a comforting weeknight meal.
Ingredients
- 4 bell peppers
- 1 cup cooked rice
- 1 pound ground beef (or turkey)
- 1 cup diced tomatoes
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground beef with the diced onion until browned.
- Add in the cooked rice, diced tomatoes, garlic powder, paprika, salt, and pepper; mix well.
- Stuff the mixture into the bell peppers.
- Place the stuffed peppers upright in a baking dish.
- If desired, sprinkle cheese on top of each pepper.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until peppers are tender and cheese is melted.
- Serve warm.
Notes
Use similar-sized bell peppers for even baking. Feel free to swap ingredients based on your preference or leftovers.
