Ingredients

  • 1 lb beef stew meat
  • 4 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 cup celery, chopped
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups mixed vegetables (peas, corn, green beans)
  • 2 tablespoons olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef stew meat and brown on all sides.
  3. Add the onion and garlic and cook until they soften.
